Apple Cinnamon Waffles
with peanut butter glazed apples
ingredients for waffle batter
1 cup whole wheat flour
3/4 cup all purpose flour
1/2 tsp salt
1 tbsp sugar
1 tsp ground cinnamon
1.5 medium apples
I like granny smith best!
1/2 tsp lemon juice
3 eggs
1 cup of milk + 1/4 cup if necessary
4 tbsp canola oil
Ingredients for peanut butter glazed apples
1 tbsp butter
1 tsp cinnamon
2 tbsp maple syrup + more to drizzle
1/4 cup of peanut butter
1.5 medium apples
2-3 tbsp warm water
DIRECTIONS for waffles
Preheat your waffle iron.
In a large bowl, combine flours, salt, sugar & cinnamon.
Grate 1.5 apples, leaving the skin on if you choose using the biggest side of a box grater. Cut remaining 1.5 apples into thin slices, set aside.
Add grated apples to a small bowl & toss in lemon juice. Then, add to the dry ingredients in your large bowl.
Coat the grated apples evenly in the flour mixture. Next, crack in the eggs, add 1 cup of milk & canola oil. Stir until combined, no streaks of flour remain & grated apples are hidden in the batter. It will be thick! If needed, use the extra milk to thin.
Prepare as you would in your waffle iron. Option to hold prepared waffles in the oven turned on to its lowest setting while you prepare the topping.

In a frying pan over medium heat, melt butter & add in sliced apples.
Sprinkle with cinnamon & toss with a spatula to coat evenly.
Drizzle with 1 tbsp of maple syrup & let cook for ~5-6 minutes until the apples start to soften.
While apples are cooking, combine peanut butter, warm water & 1 tbsp of maple syrup in a separate bowl. Option to add some more cinnamon in here as well!
Build your plate! Top prepared waffles with warm cinnamon apples & drizzle with PB glaze plus more syrup, if desired.
