Chocolate Chip Chickpea

ingredients

  • 1/2 cup nut butter

  • 1 can chickpeas, drained & rinsed

  • 1/4-1/3 cup honey or maple syrup

  • 2 tsp vanilla extract

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • 3/4 cup oats (large flake, steel cut, quick, whatever you’re feeling)

  • 1/4 tsp salt

  • 1/2 cup semi-sweet chocolate chips + more for sprinkling

 
 

HOW TO

  1. Preheat oven to 350°F.

  2. In a blender, combine chickpeas, nut butter & 1/4 cup of honey or maple syrup.

  3. Blend until smooth, scraping down the sides as needed. Taste for sweetness, adding remaining honey or maple syrup if desired.

  4. Transfer mixture into a medium sized bowl. It will be thick, like cookie dough before flour. Add vanilla, baking powder, baking soda & salt. Stir.

  5. Fold in oats & chocolate chips.

  6. Prepare 8x8 or 9x9 baking dish with oil to prevent sticking. Spread batter evenly using a spatula. Sprinkle additional chocolate chips on top if desired.

  7. Bake for 25-30 minutes. Enjoy!
