Chocolate Chip Chickpea
Cookie bars
ingredients
1/2 cup nut butter
1 can chickpeas, drained & rinsed
1/4-1/3 cup honey or maple syrup
2 tsp vanilla extract
1/2 tsp baking soda
1/2 tsp baking powder
3/4 cup oats (large flake, steel cut, quick, whatever you’re feeling)
1/4 tsp salt
1/2 cup semi-sweet chocolate chips + more for sprinkling
HOW TO
Preheat oven to 350°F.
In a blender, combine chickpeas, nut butter & 1/4 cup of honey or maple syrup.
Blend until smooth, scraping down the sides as needed. Taste for sweetness, adding remaining honey or maple syrup if desired.
Transfer mixture into a medium sized bowl. It will be thick, like cookie dough before flour. Add vanilla, baking powder, baking soda & salt. Stir.
Fold in oats & chocolate chips.
Prepare 8x8 or 9x9 baking dish with oil to prevent sticking. Spread batter evenly using a spatula. Sprinkle additional chocolate chips on top if desired.
Bake for 25-30 minutes. Enjoy!
