Tahini Roasted Cauliflower

ingredients

  • head of cauliflower, broken into florets

  • 2 tsp salt

  • 2 tbsp olive oil

  • 1/2 cup tahini

  • 1/4 cup warm water

  • 1 tbsp lemon juice

  • 2 cloves of garlic, pressed

  • S+P to taste

 
 

INSTRUCTIONS

  1. Preheat oven to 425.

  2. Toss cauliflower florets in olive oil and 2 tsp salt. Transfer to lined baking sheet.

  3. Bake for 30-40 min, flipping half way through.

  4. Meanwhile, make your tahini sauce by combining remaining ingredients.

  5. Pour tahini sauce over roasted cauliflower.

  6. YUM!
