Warm Potato Salad

ingredients

  • 4 large red potatoes

  • 3/4 cup vegan or regular mayo

  • 2 tsp apple cider vinegar

  • 1 tbsp whole grain Dijon mustard

  • 2 tbsp fresh parsley, chopped

  • 2 tbsp fresh dill, chopped

  • 3 green onions, chopped

  • 2 stalks of celery, chopped

  • 1 tsp turmeric

  • 1 tsp lemon zest

  • S&P to taste

 
 

INSTRUCTIONS

  1. Boil potatoes for about 15 minutes until tender, then cube.

  2. In a medium bowl combine mayo, apple cider vinegar & dijon. Add cubed potatoes & toss to coat evenly.

  3. Add remaining ingredients & serve immediately, or reheat in an oven safe dish at 400° for 15 minutes.
