Warm Potato Salad
ingredients
4 large red potatoes
3/4 cup vegan or regular mayo
2 tsp apple cider vinegar
1 tbsp whole grain Dijon mustard
2 tbsp fresh parsley, chopped
2 tbsp fresh dill, chopped
3 green onions, chopped
2 stalks of celery, chopped
1 tsp turmeric
1 tsp lemon zest
S&P to taste
INSTRUCTIONS
Boil potatoes for about 15 minutes until tender, then cube.
In a medium bowl combine mayo, apple cider vinegar & dijon. Add cubed potatoes & toss to coat evenly.
Add remaining ingredients & serve immediately, or reheat in an oven safe dish at 400° for 15 minutes.
